Herb Roasted Turkey Breast





Serves 2
Ingredients:
| 2 turkey breasts |
| 4 tablespoons olive oil |
| 2 teaspoons dried rosemary |
| 2 teaspoon dried thyme |
| Coarse salt, to taste |
| Fresh ground black pepper, to taste |
| 2 sprigs Italian parsley |
| 2 sprigs fresh rosemary |
| 2 sprigs sage |
| 4 cloves garlic, sliced |
Directions:
- Open up skin on each, enough so you can fit the herbs inside. Take 1 sprig Italian parsley, rosemary and sage, and 2 sliced cloves garlic for each breast and lay all inside under the skin. Rub each breast with 2 tablespoons olive oil, then sprinkle with salt, pepper, 1 teaspoon of dried thyme and rosemary.
- Place both in a large baking dish, bake at 425 degrees F for 15- 20 minutes or until the skin is turning a golden color. Turn down heat to 350 degrees F and bake an additional 35 minutes.
- Remove from oven and let rest 8 minutes before cutting. Those beautiful herbs inside flavor the meat so nicely!
