Chicken with Cashews

Serves 4


Ingredients:

4 large boneless skinless chicken breasts, halved
1/4 cup water
1/4 cup dry sherry
1/4 cup soy sauce
2 tablespoons dark corn syrup
1 tablespoon vinegar
4 teaspoons cornstarch
1/4 cup peanut oil
1/2 cup chopped green pepper
1/2 cup cashews
2 teaspoons sliced green onion
2 cloves garlic, minced
1/4 teaspoon ground fresh ginger
1/2 teaspoon crushed red pepper

Directions:

  1. Cut chicken into 1 inch cubes.
  2. To prepare the seasoning sauce combine the water, sherry, soy sauce, syrup, vinegar, and cornstarch, blend thoroughly, set aside.
  3. Heat the wok, adding oil to wok and pouring it around the sides, for about 2 minutes.
  4. Add chicken, stir fry until chicken is white, make a well in the center of the wok.
  5. Add green pepper and cashews, stir fry 2 minutes. Make a well in the center of the wok.
  6. Add onions, garlic, ginger, red pepper, stir fry 1 minute. Make well in center.
  7. Stir seasoning sauce and add to center of wok bring to a boil without stirring about 1 minute. Cook additional one minute or until thickened and mix with all ingredients.
