Chicken with Cashews





Serves 4
Ingredients:

4 large boneless skinless chicken breasts, halved+ Add to Shopping List |
1/4 cup water+ Add to Shopping List |
1/4 cup dry sherry+ Add to Shopping List |
1/4 cup soy sauce+ Add to Shopping List |
2 tablespoons dark corn syrup+ Add to Shopping List |
1 tablespoon vinegar+ Add to Shopping List |
4 teaspoons cornstarch+ Add to Shopping List |
1/4 cup peanut oil+ Add to Shopping List |
1/2 cup chopped green pepper+ Add to Shopping List |
1/2 cup cashews+ Add to Shopping List |
2 teaspoons sliced green onion+ Add to Shopping List |
2 cloves garlic, minced+ Add to Shopping List |
1/4 teaspoon ground fresh ginger+ Add to Shopping List |
1/2 teaspoon crushed red pepper+ Add to Shopping List |
Directions:
- Cut chicken into 1 inch cubes.
- To prepare the seasoning sauce combine the water, sherry, soy sauce, syrup, vinegar, and cornstarch, blend thoroughly, set aside.
- Heat the wok, adding oil to wok and pouring it around the sides, for about 2 minutes.
- Add chicken, stir fry until chicken is white, make a well in the center of the wok.
- Add green pepper and cashews, stir fry 2 minutes. Make a well in the center of the wok.
- Add onions, garlic, ginger, red pepper, stir fry 1 minute. Make well in center.
- Stir seasoning sauce and add to center of wok bring to a boil without stirring about 1 minute. Cook additional one minute or until thickened and mix with all ingredients.
