Ingredients:
4 tilapia filets, patted dry with paper towels
1 cup Panko bread crumbs
1 tablespoons lemon pepper seasoning
1 teaspoons garlic powder
3 teaspoons lemon zest
1 cup flour, seasoned with salt and pepper
Egg wash, 2 eggs, whisked with 1/4 cup milk
Butter, for sautéing
Olive oil, for sautéing
Directions:
In a medium bowl, whisk together the panko, lemon pepper, garlic powder, and lemon zest; set aside. Dredge tilapia filets first in seasoned flour, shaking off excess, then the egg wash, then the panko bread crumb mixture.
Preheat large sauté pan over medium-high heat and add 2 tablespoons each butter and olive oil. When pan is hot, add coated tilapia filets to pan and brown on both sides until cooked through, about 3 or 4 minutes on each side. Add more olive oil and butter as needed. Drain on paper towels and serve hot with a squeeze of fresh lemon.
