BBQ Pulled Jackfruit Sandwich

Ingredients:
20 Can Jackfruit
1 Tsp Olive Oil
1/2 Small Red Onion, chopped
2 Garlic Cloves, minced
1/2 Tsp Ground Cumin
1/2 Tsp Smoked Paprika
3/4 Cup BBQ Sauce, vegan if preferred
1 1/2 Tbsp Sriracha
2 Tsp Arrowroot Powder
Salt and Pepper, to taste
Vegan or Gluten Free Buns
Shredded Lettuce
Directions:
Preheat oven to 400 degrees and line a baking sheet with parchment paper.
Drain and rinse the jackfruit. Use forks or your hands to pull the jackfruit apart to resembled pulled meat. Use forks for finer shreds of meat and hands for larger shreds of meat.
Heat oil in a large pan over medium heat. Add the onion and garlic and sauté until translucent.
Add the jackfruit, cumin, and paprika, and cook for about 5 minutes. Add a pinch of salt and pepper.
In a small bowl mix together the BBQ sauce, sriracha, and arrowroot powder. Add to the pan and stir to coat. Heat for about 1 minutes.
Pour the mixture onto the baking sheet and spread out. Bake for 7 minutes then remove from the oven and stir. Bake for another 7 minutes, until the sauce is thick and sticky. You can skip this step if you don’t want the sauce to be sticky.
Place the jackfruit mixture on a bun, top with shredded lettuce and the other half of the bun. Serve immediately.
