Ingredients:
| 1 15oz Can Black Beans, drained and rinsed |
| 1 Tbsp White Vinegar |
| 1/2 Cup Pumpkin Puree |
| 3 Tbsp Coconut Oil, melted and cooled |
| 1 Tsp Vanilla Extract |
| 1/3 Cup Maple Syrup, room temp |
| 1/2 Cup Old Fashioned Oats |
| 1 Tsp Baking Soda |
| 1/2 Cup Cocoa Powder |
| 1/4 Tsp Salt |
| 2/3 Cup Chocolate Chips, plus more for topping |
Directions:
- Preheat oven to 350 degrees and grease an 8x8 baking pan.
- Combine all ingredients in the bowl of a food processor, except the chocolate chips. Process until smooth.
- Fold in the chocolate chips.
- Pour into the 8x8 baking pan and top with more chocolate chips.
- Bake for 15-20 minutes.
- Remove and let cool for about 20 minutes.
- Slice and enjoy.
- ***Use vegan chocolate chips to make brownies vegan***
