Cauliflower Fried Rice (Vegan)





Ingredients:
| 2 12oz Bags Cauliflower Rice |
| 1 Tbsp Sesame Oil |
| 1/4 Cup Low Sodium Soy sauce, add more to taste |
| 1 Tbsp Garlic, minced |
| 1 Cup Corn |
| 1 Bag Mixed Vegetables, any variety |
| 4 Green Onion, chopped |
| 1 Tsp Red Pepper Flakes |
| 1 Tsp Salt |
| 1/2 Tsp Black Pepper |
Directions:
- Cook the rice and mixed vegetables in the microwave according to package instructions. If using frozen corn, cook according to package instructions but if using canned corn, drain and set aside.
- Heat the sesame oil over medium heat in a large skillet or wok. Add the garlic and sauté for 2-3 minutes.
- Add the cauliflower rice, mixed vegetables, corn, soy sauce, and red pepper flakes. Stir to combine. Cover and continue to cook for 10 minutes to let the flavors blend together, mixing every so often.
- Serve warm with chopped green onion on top.
