Jalapeno Popper Stuffed Chicken

Ingredients:
2 Boneless Skinless Chicken Breasts
6 oz Cream Cheese, softened
1/3 Cup Shredded Cheddar Cheese
1-2 Jalapenos, seeded and diced
Salt, to taste
Black Pepper, to taste
Paprika, to taste
Olive Oil
Directions:
Preheat the oven to 400 degrees F. Spray an 8x8 baking dish with cooking spray.
Butterfly each chicken breast by slicing in half, lengthwise, about ¾ of the way. You want the chicken breast to fold open so don’t slice the whole way through.
In a small bowl, mix together the cream cheese, cheddar cheese, and jalapenos.
Stuff the chicken breasts with the jalapeno mixture and use toothpicks to hold the edges together. Place the chicken in the prepared baking dish.
Sprinkle the tops of the chicken with salt, pepper, and paprika. Drizzle olive oil over the top.
Bake, uncovered, for 35-40 minutes or until the internal temperature of the chicken is 165 degrees F.
Serve warm with a side of cooked vegetables. Enjoy!
