Chicken Parmesan Sloppy Joe’s

Ingredients:
1 lb Ground Chicken
1/2 Large Yellow Onion, diced
12 oz Tomato Sauce
4 oz Tomato Paste
1 Tbsp Italian Seasoning
1 Cup Mozzarella Cheese, cut into small cubes
Shredded or Shaved Parmesan Cheese, for topping
1/2 Cup Panko Breadcrumbs
Fresh Chopped Parsley, for garnish
4 Brioche Buns, for serving
Directions:
Add the breadcrumbs to a small skillet and heat over medium heat until lightly toasted. Stir occasionally to prevent burning. Remove the breadcrumbs from the pan and set aside.
Add the chicken and onions to a large skillet and heat over medium heat. Cook until the meat is cooked through and the onions are soft and translucent. Break apart the meat into small chunks as it cooks.
Add the Italian seasoning and stir to combine.
Add the tomato sauce and tomato paste to the skillet and stir to combine. Continue to simmer over medium heat until the sauce is slightly evaporated and absorbed.
Add the cubed cheese evenly over the top. Reduce the heat to low, cover, and allow the cheese to melt.
Place a large scoop onto each bun. Top with parmesan cheese, toasted breadcrumbs, and parsley. Enjoy!
