Ingredients:
1 lb Ground Chicken
8 oz Can Water Chestnuts, diced
1 Tbsp Vegetable Oil
1 Tbsp Fresh Ginger, minced
1/2 Tsp Red Pepper Flakes
3 Garlic Cloves, minced
4 1/2 Tbsp Rice Vinegar
4 1/2 Tbsp Soy Sauce
3 Tsp Hoisin Sauce
1/4 Cup Water
4 1/2 Tbsp Sugar
1 1/2 Tbsp Cornstarch
Directions:
In a large bowl, add the rice vinegar, soy sauce, hoisin sauce, water, sugar, and cornstarch. Whisk together. Set aside.
Add the vegetable oil, ground chicken and water chestnuts (drained). Heat over medium heat. Cook until the chicken is cooked through, breaking it apart as it cooks.
Add the ginger, garlic, and red pepper flakes. Continue to cook for 1 minute.
Add the liquid mixture and stir to coat. Reduce the heat to low and let the mixture simmer and absorb into the chicken, stirring frequently, for 2-3 minutes.
Remove from the heat and serve warm over a bed of rice. Enjoy!
