General Tso’s Ground Chicken

Ingredients:

+ Add All Ingredients to Shopping List
1 lb Ground Chicken+ Add to Shopping List
8 oz Can Water Chestnuts, diced+ Add to Shopping List
1 Tbsp Vegetable Oil+ Add to Shopping List
1 Tbsp Fresh Ginger, minced+ Add to Shopping List
1/2 Tsp Red Pepper Flakes+ Add to Shopping List
3 Garlic Cloves, minced+ Add to Shopping List
4 1/2 Tbsp Rice Vinegar+ Add to Shopping List
4 1/2 Tbsp Soy Sauce+ Add to Shopping List
3 Tsp Hoisin Sauce+ Add to Shopping List
1/4 Cup Water+ Add to Shopping List
4 1/2 Tbsp Sugar+ Add to Shopping List
1 1/2 Tbsp Cornstarch+ Add to Shopping List

Directions:

  1. In a large bowl, add the rice vinegar, soy sauce, hoisin sauce, water, sugar, and cornstarch. Whisk together. Set aside.
  2. Add the vegetable oil, ground chicken and water chestnuts (drained). Heat over medium heat. Cook until the chicken is cooked through, breaking it apart as it cooks.
  3. Add the ginger, garlic, and red pepper flakes. Continue to cook for 1 minute.
  4. Add the liquid mixture and stir to coat. Reduce the heat to low and let the mixture simmer and absorb into the chicken, stirring frequently, for 2-3 minutes.
  5. Remove from the heat and serve warm over a bed of rice. Enjoy!
