Marinated Tofu & Veggie Skewers (Vegan)

Ingredients:

16 oz Firm or Extra Firm Tofu, pressed
3-4 Garlic Cloves, minced
1 1/2 Tsp Fresh Ginger, grated
1/3 Cup Soy Sauce
1/2 Tsp Sriracha
2 Tbsp Rice Vinegar
1 Tbsp Sesame Oil
2 Tbsp Maple Syrup or Agave Nectar
1 Tbsp Lemon Juice
1 Tsp Worcestershire Sauce
1 Red Bell Pepper, cut into 1-inch pieces
1 Yellow Bell Pepper, cut into 1-inch pieces
1 Zucchini, cut into 1-inch pieces or rounds
1 Red Onion, cut into 1-inch pieces
12 Small Mushrooms

Directions:

  1. Press the tofu according to package instructions. Slice into 1-inch cubes and set aside.
  2. Combine the garlic, ginger, soy sauce, sriracha, rice vinegar, sesame oil, maple syrup/agave nectar, lemon juice, and Worcestershire sauce in a shallow dish. Whisk together.
  3. Add the tofu. Cover and refrigerate for at least one hour.
  4. While the tofu marinades, soak 8-10 wooden skewers. Alternatively, you can use metal skewers.
  5. Assemble the skewers by sliding on a piece of tofu, followed by one of each veggie, then another piece of tofu, etc. Keep alternating until you have assembled all skewers. You should have enough for 8-10 skewers.
  6. Heat a grill pan over medium-high heat. Add the skewers and cook for about 3 minutes per side, or until the veggies are tender and the tofu has nice grill marks. Brush the leftover marinade over the skewers as they cook.
  7. Serve immediately while still hot.
