Grilled Chicken Caprese

Ingredients:

3-4 Boneless Skinless Chicken Breasts
1 1/2 Tsp Italian Seasoning
3/4 Tsp Garlic Powder
3/4 Tsp Onion Powder
3/4 Tsp Salt
1/2 Tsp Black Pepper
3-4 Slices Mozzarella
3-4 Tomato Slices
1/4 Cup Fresh Basil, chopped
Balsamic Glaze, for topping

Directions:

  1. Preheat a grill pan over medium-high heat. Spray with cooking spray.
  2. Combine the Italian seasoning, garlic powder, onion powder, salt, and pepper in a small bowl.
  3. Season both sides of the chicken.
  4. Grill 6-7 minutes on each side or until cooked through and an internal temperature of 165 degrees F is reached.
  5. Top each piece of chicken with a slice of mozzarella. Loosely place tin foil over the grill pan to act as a cover to melt the cheese.
  6. Once the cheese has melted, remove the chicken to plates. Top each with a slice of tomato and chopped basil. Drizzle with the balsamic glaze. Enjoy!
