Bacon Wrapped Salmon

|4 fresh salmon fillets, (6 oz)|
|8 strips bacon, cut in half|
|1 Savu Smoker Bag, (Available at the Chef Counter inside Festival Foods)|
- Pat salmon fillets dry with paper towels; sprinkle evenly with salmon rub. Lay down 4 half-strips of bacon over each salmon filet and sprinkle tops of bacon with salmon rub as well.
- Spray inside of smoker bag with cooking spray. Using both hands, carefully, place prepared salmon fillets in smoker bag. Fold ends of bag over twice; then fold in both corners.
- Cook according to instructions on smoker bag. Cut bag down the top to expose the salmon; broil the last 5 minutes of cooking time or until bacon is browned and crisp.
- Serve with lemon wedges on the side, if desired.
