Start by preheating the oven to 400 degrees F and prepare all your ingredients; chop the onion, mince the garlic, slice the tomatoes, and chop the basil.  Then, set all the ingredients aside so you can grab them as you work.

Next, heat oil in a large, oven safe skillet, over medium heat.  You want an oven safe skillet as you will be placing it in the oven in a later step.  If you don’t have an oven safe skillet, you could use a Dutch oven.  Add the onion and cook until soft and translucent, about 5 minutes.  Add the garlic and cook for about 30 seconds.

Add the ground chicken and cook until completely cooked through, breaking the meat apart as it cooks.  Season the meat with salt, oregano, dried basil, and dried parsley.  Stir to combine, then add the tomato sauce and balsamic vinegar.  Stir again and let the ingredients simmer for about 5 minutes.

Scatter the mozzarella balls and sliced tomatoes around the skillet.  Place the skillet in the oven and bake for about 5-7 minutes or until the cheese is melted and starting to spread.  The tomatoes should also start to soften and burst.

Remove the skillet from the oven and drizzle balsamic glaze over the top.  You can use regular balsamic vinegar if you don’t have balsamic glaze, but the glaze is worth it if you can find it at your local Festival Foods!  It’s so rich and flavorful 🙂

Garnish the top with a sprinkle of grated parmesan cheese and fresh chopped basil.  Serve the dish warm and enjoy!
