Valentine’s Day is fast approaching.  Do you plan to celebrate with your significant other, kids, or perhaps host a Galentine’s Day celebration?  We like to do something every year but it’s never the same thing.  Some years we go out, some years we stay in, and some years we postpone until we can figure out what we want to do.  Whatever you end up doing (or not doing), I hope you enjoy it! Valentine’s Day is a few short days away.  Do you have plans or know how you’re going to celebrate?  A lot of people have set traditions each year and like to go out to dinner or prepare a fun meal at home with their friends and/or loved ones.  We prefer staying in and making a meal at home.  We feel less rushed, it’s fun to cook together, and we can make something special to celebrate the holiday.  Two things I like to focus on when creating new Valentine’s Day recipes is desserts and cocktails.  Both will enhance your dinner and make the event more memorable and are required to complete the meal (in my opinion).  So, let’s walk through my new recipes and hopefully something will catch your eye to prepare for Valentine’s (or Galantine’s) Day! Valentine’s Day is fast approaching.  Do you know how you are celebrating?  They are so many options…spend time with a significant other or your kids, maybe a few close friends (think Galantine’s Day), or boycott the day all together 😊 Which I know some people like to do, and that’s OK!  We tend to make a last-minute decision on how we will celebrate and some years we go out to eat and some years we stay in.  With COVID and rising cases, we’ve been looking for more “at home” options to say safe and healthy. Cake Pops are a fun phenomenon and something I had to try.  When I think of a Cake Pop, I think of cake that is coated in melted chocolate, skewered on a stick, and served as a bite sized treat.  They can be made in most cake flavors and decorated as simple or elaborate as you want.  They are very similar to truffles but are often a little lighter and truffles aren’t served on a stick. Ok jockeys, quit horsing around it’s time for some Kentucky Derby Themed recipes.  I’ve got the Triple Crown of recipes for you now, so bear with me! First up we’re serving Bourbon Meatballs which you’ll find have an exquisite sweet heat to them.  We started with Mom’s Meatloaf, found in our Meat Department.  Place the meatloaf in a bowl and mix together with finely chopped onion then form into 1″ balls (use a small scoop to help make uniform size).  Heat some olive oil in a skillet and brown each of the meatballs, then transfer to a baking sheet and place into your preheated oven (at 350F) until cooked through.   Next up we are going to work on our bourbon sauce. Well we’re back to that time of year again, Mardi Gras.  Unfortunate timing this year that Mardi Gras and Valentine’s Day are backed up so close together, but we couldn’t resist doing some fun New Orleans recipes for you. First up, let’s get our cocktail game started.  We made our very own Hurricanes.  We simplified some of the more detailed recipes usually found.  All you need is mango passion fruit juice, lemon juice, lime juice, orange juice, white rum and dark rum.  These are strong drinks, fit for anyone ready to party Mardi Gras style! Starting with our appetizers we decided to do scallops with a sweet chili sauce.  A very simple dish, you thaw the scallops and simply dry with paper toweling, sear both sides, then serve with sweet chili sauce.
