You want to start by making the dressing. Combine the garlic, parmesan, mayo, olive oil, lemon juice, Dijon, and soy sauce in a dressing shaker or mixing bowl. Shake or whisk to combine. Season with a pinch of salt and pepper. Taste and adjust the seasoning if necessary. Set aside until ready to use. If the dressing is thick, add an additional Tbsp of olive oil to help thin it out.
Next, preheat the grill (or use a grill pan indoors) to medium-high heat. Slice the baguette at a diagonal. Spritz both sides (or brush) with olive oil and season with salt and pepper. Place on the grill grates until charred and you have grill lines, about 1-2 minutes. Flip over and repeat on the other side. You can grill for as long as you like, if you would prefer to not “char” the bread 🙂 Personally, I like the smokey flavor of the char lines and think it adds to the salad. Remove the baguette to a baking sheet or plate when ready. Once it’s cool enough to touch, tear or slice into crouton size pieces.
The next step is to slice each romaine stalk in half lengthwise. Then, spritz or brush with olive oil and season with salt and pepper. Place the romaine, cut side down, and grill until charred, about 1-2 minutes. So, make sure to leave the grill on! When ready, remove to a serving platter or individual plates.
You are now ready to assemble the salad(s). Drizzle the dressing right on top of the grilled romaine. Top with the croutons and sprinkle with grated parmesan. Serve and enjoy!
