Start by cracking the eggs into a bowl and whisking to combine. Season the eggs with salt and whisk again, then set aside.

In a separate bowl, combine the Boursin cheese with 1 ½ Tsp water and stir to combine. This will help make the cheese easier to pipe onto the omelet. Now, add the mixture to a Ziploc bag and snip off one of the corners. You will use this to pipe the cheese onto the omelet in a later step so go ahead and set it aside.

Melt 1 Tbsp unsalted butter in a nonstick skillet over low heat. Once melted, add the whisked eggs and season with white pepper. You can substitute black pepper, if you prefer. Cook the eggs low and slow, swirling the pan and lifting the eggs carefully to allow the liquid to go underneath until the omelet is set.

Next, pipe a strip of the Boursin mixture down the center of the omelet (you might not use all the mixture but use as much or as little as you prefer). Use a spatula to gently fold the omelet in thirds, over the Boursin cheese. Continue to heat until the cheese is melted, and the egg is entirely cooked through.

Transfer the omelet to a plate to serve. Rub the remaining butter over the top, sprinkle with crushed chips and garnish with fresh chopped chives.  Serve and enjoy!
