Two of my favorite things to eat are breakfast foods and pizza. There is nothing like a good brunch with plenty of options to choose from but there is also something so satisfying about leftover pizza for breakfast. So really, pizza is a breakfast food 🙂
Today I want to share with you my recipe for a super simple Breakfast Pizza. We actually ate this for dinner one night (breakfast for dinner = brinner at our house) and it was the perfect meal, but you could easily whip this up on the weekend for breakfast. It’s a quick recipe that is ready in under 30 minutes and tastes incredible. The recipe is also customizable. We had cheese, bacon, and egg pizza but you could substitute the bacon with sausage, add some diced onions or bell peppers, etc.

Start by cooking the bacon to package instructions. Let the bacon cool, then chop into small pieces. Since the bacon must cool, you can prepare the bacon ahead of time and store it in the fridge until ready to use. This will help cutdown on prep time in the morning if you are making this for breakfast.
Next, preheat the oven to 375 degrees F and place the pizza crust on a baking sheet.
I like to use a pre-cooked pizza shell. It’s soft, chewy, and the perfect texture. You can use a refrigerated pizza dough if you prefer. If you do choose this option, I would recommend baking the pizza dough according to package instructions, then add your toppings and bake again (per the instructions below…. basically, you want the eggs to be set).
In a large bowl, whisk together the eggs and milk. Season with salt and pepper, to taste. Sometimes the bacon adds enough salt to the dish so don’t add to much additional salt. You can always season again after baking!
Add the cheese and bacon and stir to combine.
I like to buy the cheese in blocks and shred it myself so I can have finely shredded cheese but the pre-shredded bags of cheese from the grocery store are just fine to use.
Pour the mixture onto the pizza crust and spread to the edges in an even layer. You don’t want the mixture to be spilling over the sides.
Bake for 12-14 minutes or until the eggs are set and the cheese has melted.
Carefully remove the pizza to a cutting board, slice into wedges, and enjoy!
