Ingredients:

1 Can Rotel Original Diced Tomatoes & Green Chilies+ Add to Shopping List |
1 14.5oz Can Whole Tomatoes, plus juice from can+ Add to Shopping List |
2 Tbsp Jalapeno, diced+ Add to Shopping List |
1/2 Cup Yellow Onion, diced+ Add to Shopping List |
4 Cloves Garlic, minced+ Add to Shopping List |
2 Tbsp Cilantro, chopped+ Add to Shopping List |
1 Tsp Sea Salt+ Add to Shopping List |
1/2 Tsp Cumin+ Add to Shopping List |
1/2 Tsp Sugar+ Add to Shopping List |
1 1/2 Tbsp Lime Juice+ Add to Shopping List |
Directions:
- Slice the jalapeno and yellow onion. Add to a food processor and pulse for a few seconds.
- Add the entire can of Rotel and the entire can of tomatoes, juicy included, to the food processor. Also add the garlic, cilantro, salt, cumin, sugar, and lime juice. Pulse until well blended but do not puree - you want chunky salsa.
- Pour the salsa into a bowl. Cover and place in the fridge for at least 2 hours before serving. This will help the flavors blend together.
- Serve chilled with tortilla chips. Store any leftovers in the fridge.
