Homemade Air Fryer Pizza Rolls are simply the best!  They are mini pizza pockets filled with pizza sauce, melted cheese, and other ingredients of your choice.  Pizza Rolls are best served hot but also reheat well for lunch or a snack, if you have any leftovers.

Start by laying out the egg roll wrappers on the counter.  I think one package contains about 16-20 egg roll wrappers.  I like to use the entire package.  These are quick and easy, and make nice leftovers, but you can make as many (or few) as you like.

Position the egg roll wrappers in the shape of a diamond.

Add 1 Tbsp pizza sauce to the bottom third of the egg roll wrapper.

Top with 1-2 Tbsp shredded cheese, then any additional toppings of your choice.  We like to have pepperoni with black olives and Canadian bacon with pineapple.  Chopped green pepper, onion, or mushrooms would make great toppings too!

Fold the bottom point of the wrapper up and over the filling.  You want the point to be touching the center of the wrapper.

Fold in both sides.

Starting from the bottom, roll the egg roll wrapper until it is completely closed.  Use a small drop of water to help hold the wrapper closed on the point and all sides.

I must admit, mine never turn out very round, like traditional egg rolls you get from a Chinese restaurant, but they still taste great!  Perhaps I don’t roll mine tight enough so if you get the perfect shape I’m referring to, please share your tips!

Repeat this until all pizza rolls have been assembled.  Then place the pizza rolls on a baking sheet.

Brush olive oil over the top of the pizza rolls and on the bottom of the air fryer basket.

Place the pizza rolls, seam side down, in the basket.  Make sure to leave space between each one for even cooking and work in batches.  My air fryer only fit 3-4 pizza rolls at a time, but it depends on the size of your air fryer.  While the first batch cooks, place the baking sheet with the rest of the pizza rolls in the fridge.

Air fry at 375 degrees for 6 minutes.  Then, flip the pizza rolls over, lightly brush the other side with olive oil, and air fry for an additional 2 minutes.  The basket will be HOT so use tongs to carefully remove the pizza rolls.

If you are serving these immediately (i.e. someone will be eating the first batch while the second batch cooks), place the pizza rolls on a plate and serve with extra pizza sauce for dipping.

If you are going to wait and serve once all pizza rolls have cooked, preheat the oven to 200 degrees F.  Place the pizza rolls on a baking sheet and keep warm in the oven while the next batch cooks.  As a batch finishes, add the pizza rolls to the baking sheet and return to the oven, and continue with the next batch.  Then all pizza rolls will be crispy and warm when you are ready to eat.

Once you are ready to eat, we with additional pizza sauce on the side and a sprinkle of parmesan cheese on top.  Enjoy!

These are a great recipe for a quick weeknight meal or a grab-and-go option.  If you have picky eaters, they can pick and choose their own toppings…just make sure to keep track of which egg rolls are for which person!

With Halloween coming up, you could make these for dinner before trick-or-treaters start ringing your doorbell or for the kids to enjoy before they head out into the neighborhood in search of candy.
