Cashew Chicken Lettuce Wraps are a delicious, low carb dinner option, and are better than takeout! That’s right…. I said it. Sometimes homemade meals are better than takeout. These lettuce wraps are restaurant style and come together in about 20 minutes. They are filled with tender chicken, cashews, ginger, garlic, and plenty of heat! Each lettuce wrap is full of flavor and make quite the healthy meal option.

Start by slicing the chicken into 1-inch pieces. Then, season with salt and pepper and set aside. An alternate option would be to substitute ground chicken or ground turkey if you prefer. You obviously don’t need to slice either of those but should still season with salt and pepper.
In a mixing bowl, combine the chicken stock, soy sauce, ginger, hoisin sauce, rice wine vinegar, and cornstarch. Whisk until well combined and set aside. The flavors in this sauce are incredibly vibrant and complement each other very well!
Heat a skillet over medium heat. Add the chicken and cook for about 10 minutes, or until cooked through.
Add the garlic and stir to combine. Continue to cook for about 30 seconds.
Then, reduce the heat to low and add the sauce. Stir to combine and coat all the chicken.
Continue to stir as the sauce warms through and thickens, which should take about 5 minutes.
Add the sriracha and stir to combine. Taste the sauce and add additional sriracha, to taste. Don’t add too much up front because you can always add more but you can’t take any out! You want to be able to enjoy the meal without it being too spicy to eat. I usually start with 2 Tsp of Sriracha and go from there.
Add ¾ of the container of cashews and ¾ of the green onions. Stir to incorporate.
Rinse and dry the lettuce leaves. Lay flat on a serving platter or individual plates. Scoop the cashew chicken mixture into each lettuce leaf, with the lettuce acting as a cup to hold the mixture.
Top with the remaining cashews and green onions. Serve immediately while the lettuce is crisp, and the cashew chicken mixture is hot! Enjoy!

The cashew chicken mixtures is good enough to eat on its own or you could add it to a bed of lettuce if you prefer to eat it that way. It also holds up fairly well if you have any leftovers; simply reheat in the microwave the next day. I hope you enjoy this low-carb meal option. It’s light, refreshing, and quite delicious.
