These low carb Hawaiian Pizza Chicken Tenders will be a new weeknight favorite!  They are all the flavors of a traditional Hawaiian pizza but without the crust.  Instead, the ingredients are piled on top of chicken tenders and baked to perfection.  The recipe is amazing!  The chicken is moist and tender, the Canadian bacon is lean and a little salty, the marinara sauce is fresh and herby, the pineapple adds a wonderfully sweet flavor, and the mozzarella really brings it all together. The recipe can be found here. Start by preheating the oven to 350 degrees F and line a baking sheet with parchment paper. Season each chicken tender with salt and pepper or garlic powder.  This step is optional, but I think it’s necessary to add flavor to the chicken.  You could also use an Italian blend. Cauliflower Parmesan is a real delight!  Not only is it delicious and hearty, it’s also a vegetarian meal that will satisfy any carnivore (I think…don’t quote me on this :)).  So, if you are craving Italian food, I recommend you give this a try! Drizzle with olive oil and sprinkle with salt and pepper. Bake for 30-35 minutes or until the cauliflower is tender and golden brown. Remove from the oven and top with marinara sauce.  Add 1-2 cups, depending on how much marinara sauce you want.  This direction is 100% to your taste.  I like a little extra … Continue reading

I said it.  Sometimes homemade meals are better than takeout.  These lettuce wraps are restaurant style and come together in about 20 minutes.  They are filled with tender chicken, cashews, ginger, garlic, and plenty of heat!  Each lettuce wrap is full of flavor and make quite the healthy meal option. The recipe can be found here. Start by slicing the chicken into 1-inch pieces.  Then, season with salt and pepper and set aside.  An alternate option would be to substitute ground chicken or ground turkey if you prefer.  You obviously don’t need to slice either of those but should still season with salt and pepper. In a mixing bowl, combine the chicken stock, soy sauce, ginger, hoisin sauce, rice wine vinegar, and cornstarch.  Whisk until well combined and set aside.  The flavors … Continue reading
