Cauliflower Parmesan is a real delight!  Not only is it delicious and hearty, it’s also a vegetarian meal that will satisfy any carnivore (I think…don’t quote me on this :)).  So, if you are craving Italian food, I recommend you give this a try!

Start by preheating the oven to 425 degrees F and line a baking sheet with parchment paper.

Slice the cauliflower into 4 planks (or 4 cauliflower steaks if you are familiar with that term).  Place the planks in a single layer on the baking sheet.

Drizzle with olive oil and sprinkle with salt and pepper.

Bake for 30-35 minutes or until the cauliflower is tender and golden brown.

Remove from the oven and top with marinara sauce.  Add 1-2 cups, depending on how much marinara sauce you want.  This direction is 100% to your taste.  I like a little extra marinara so I can ensure sauce with every bite.

Sprinkle shredded mozzarella and grated parmesan over the marinara sauce.  Again, use as much or as little as you want to meet your taste.  I like to taste cheese in each bite, so I tend to add extra of each!

Bake for an additional 5-7 minutes or until the cheese has melted and is started to brown on the top.

Finally, top with additional grated parmesan cheese and chopped basil leaves.  Fresh chopped parsley would also complement this dish nicely, instead of basil.  A dash of red pepper flakes (completely optional) also adds a little heat if you like.
