Vegan Beyond Meat Unstuffed Pepper Bowls is an easy to make, comfort food type meal, that is 100% vegan. It’s bright, colorful, and has all the flavors you love from a classic stuffed pepper recipe. For those of you who aren’t vegan, or aren’t familiar with Beyond Meat, it’s a 100% plant-based protein. I personally think it’s delicious and substitute it in a lot of dishes. In its raw form, it has the texture of ground beef. In its cooked form, it has a similar texture to ground meat, has a slightly nutty flavor, and is juicy (not like other vegetarian or vegan meats that are bland and dry). It’s hard to describe but it has good flavor.
You can add beans, corn, lentils, rice, mushrooms – anything you like to these unstuffed pepper bowls. They are completely customizable but if you prefer to follow a recipe, it can be found here.
Start by cooking the rice according to package instructions. You can use white or brown rice. I’m partial to the flavor of white rice but sometimes substitute brown rice. It all depends on what I’m making and what I have on hand. While the rice is cooking, prepare the rest of the meal. When the rice is finished cooking, set it aside.
Next, heat oil in a large skillet over medium heat. I typically use olive oil or avocado oil but I’m sure coconut oil would also work well. Add the onion and sauté for 3-4 minutes.
Add the bell peppers and stir to combine. Season with salt and pepper. Continue to heat the veggies until softened, bout 3-4 minutes. Transfer the mixture to a plate and set it aside.
Using the same skillet, heat oil over medium heat. Add the Beyond Meat and break apart into small chunks, like ground meat, while it cooks. Season with salt and pepper. Heat for 2-3 minutes, stirring occasionally.
Add the garlic and stir to combine. Continue to heat for an additional 2-3 minutes, stirring occasionally.
Add the chili powder, cumin, and cayenne pepper. Stir to combine.
Add the diced tomatoes and stir to combine.
Add the bell pepper / onion mixture back into the pan and stir to combine. Reduce the heat to low and let the mixture simmer for about 5 minutes. This will help all the flavors absorb and come together.
Right before the dish finishes cooking, stir in the parsley. It adds a bit of color and fresh flavor. Remove the pan from the heat.
Finally, assemble the unstuffed pepper bowls. Place the rice in the bottom of each bowl. Top with vegan shredded cheese. Add a heaping scoop of the Beyond Meat / veggie mixture. Top with additional vegan shredded cheese and a dollop of guacamole. Serve immediately and enjoy! You won’t know you are eating a vegan dish!

Let’s talk about the vegan shredded cheese for a minute. Some grocery stores sell pre-shredded vegan cheese and some only sell blocks of cheese. You can but either and shred it yourself if needed. I am partial to the Chao brand of vegan cheese, but I’ll take what I can get at the store! If you cannot find vegan cheese, you can skip the ingredient and the dish will still be amazing.
