Carbonara Baked Potatoes are something we tried recently, and I would definitely make again! You are probably most familiar with Pasta Carbonara, but this is a spin on the traditional Italian dish. Carbonara is essentially pancetta or bacon, with eggs, parmesan, salt, pepper, and maybe a little olive oil. It’s comfort food at its finest and super yummy when paired with baked potatoes 😊

Start by preheating the oven to 350 degrees F. Line a baking sheet with parchment paper.
Wash and dry the potatoes. Use a fork to pierce the potatoes on all sides (plus a few extra for good measure). Rub each potato with a little olive oil and place on the baking sheet. I also like to sprinkle mine with a little salt but it’s optional. Bake for 1 hour or until tender (aka you can easily pierce the potato with a fork).
While the potatoes bake, cook the bacon according to package instructions. Remove to a paper towel lined plate to drain and cool. Once cooled, chop the bacon. Reserve the bacon grease in the pan – do not discard!
Add 2 Tbsp butter to the bacon grease and turn the heat to low. Once melted, add the black pepper, and stir to combine. Remove from the heat pour into a small bowl to reserve for later.
Wipe the pan clean with a paper towel. Add the remaining Tbsp butter and heat over medium-low heat. Once melted, crack 2 eggs in the pan. Season with salt (and pepper, if desired) and cover. Cook until the egg whites are set but the yolk is still runny, about 2-3 minutes. Remove from the heat.
You are now ready to assemble! Slice the baked potatoes down the center and press the ends together to open. Drizzle the butter/oil/pepper mixture evenly between each potato. Sprinkle with parmesan cheese. Top each with a fried egg and chopped bacon. Garnish with parsley and additional parmesan cheese. Enjoy!

Personally, I love this dish. It’s filling enough to be a meal and the flavors pair well together. The baked potato is soft and flakey, the parmesan melts a bit and adds a slightly nutty flavor, the bacon is crisp and salty, and the egg yolk add a lovely sauce to each bite. This is something you could enjoy for breakfast, brunch, or dinner!
