Loaded Baked Potato Skillet

Loaded Baked Potato Skillet is a bit of a copycat recipe. We had something similar at a local restaurant and knew we had to recreate it at home. It’s such a wonderful side dish or can be used as a full meal if you want to fill up on only potatoes, which is entirely what we did 😊 The skillet is quite literally loaded with tender potatoes that are topped with a cheese sauce, shredded cheese (because you can’t have enough cheese), crumbled bacon, sour cream, and chives. It’s a typical loaded potato but pre-chopped, cooked in a skillet, and large enough to share. I highly suggest you give it a try! The recipe can be found here. Slow Cooker Loaded Baked Potato Soup is my new favorite soup. It’s rich, creamy, and loaded with the perfect toppings. It’s a made from scratch soup but it’s SO SIMPLE, so please keep reading. It’s hearty, can be a main entrée or served as a side dish/starter, reheats well so it can be enjoyed for lunch throughout the week, and makes a lot. When I first thought about making a baked potato soup, I thought this is just going to be like eating mashed potatoes. But it’s not! Carbonara Baked Potato

Carbonara Baked Potatoes are something we tried recently, and I would definitely make again! You are probably most familiar with Pasta Carbonara, but this is a spin on the traditional Italian dish. Carbonara is essentially pancetta or bacon, with eggs, parmesan, salt, pepper, and maybe a little olive oil. It’s comfort food at its finest and super yummy when paired with baked potatoes 😊 The recipe can be found here. Start by preheating the oven to 350 degrees F. Line a baking sheet with parchment paper. Wash and dry the potatoes. Use a fork to pierce the potatoes on all sides (plus a few extra for good measure). Rub each potato with a little olive oil and place on the baking sheet. I also like to sprinkle mine with a little salt but it’s optional. Chao Vegan Cheese

Have you ever tried Vegan cheese? It’s actually quite yummy! I was hesitant at first….is it expensive? Is it going to taste good? What if I hate it? Does it melt? And so many more questions crossed my mind, but I went for it and really enjoyed it. My go-to brand of choice is Vegan Chao Slices. You can find the Creamy Original and Tomato Cayenne flavors at your local Festival Foods. Both are sold in a 7oz package and the cheese is pre-sliced. It’s delicious on its own if you want to enjoy a slice right out of the package but also tastes lovely in the few dishes I’m about to share with you.
