Slow Cooker Shredded Ranch Chicken is a delicious yet versatile recipe that is perfect for any day of the week!  With only 4 ingredients needed, you’ll be able to whip it up in no time (or whip it up and start your slow cooker, lol).  The taste of the chicken reminds me of Cool Ranch Doritos…it’s a little tangy and zesty.  The chicken is very tender and moist, and the seasoning is a combination of ranch and taco seasoning making is super flavorful.  The chicken can be enjoyed as is or served as a sandwich, on top of a salad, over rice with veggies, in tacos, fajitas, or quesadillas.

The recipe can be found here.

Start by placing the boneless skinless chicken breasts in the bowl of a slow cooker.  Sprinkle the taco seasoning and ranch seasoning packets over the top.  Pour in the chicken broth.

Close the lid and cook on LOW for 6 hours or until an internal temperature of 165 degrees F is reached.  Remove the chicken to a cutting board and use to forks to shred.  Then return the chicken to the slow cooker and stir to coat with the sauce.

Serve warm and enjoy!

The recipe can be found here.

If you are not serving immediately, cover and keep warm until ready to serve, stirring occasionally.  If you are making this ahead of time, let cool and transfer to an airtight container to store in the fridge.  Reheat before serving.  This recipe also freezes well if you have leftovers or are looking to create meals for a future date.

We enjoyed the shredded chicken as tacos with shells, lettuce, tomato, cheese, olives, and avocado.  They were delicious!  We enjoyed leftovers the next day and did end up freezing some to use later, most likely when I don’t feel like cooking 😊 This would be a great recipe to make over the summer for the kids to enjoy throughout the week, maybe make nachos as a snack, or to serve at a picnic.

Happy Cooking!
