Chicken.  Bacon.  Ranch.  Three things that pair amazingly well together.  Combine them in sandwich form and you have one mighty fine meal.  Think tender chicken, creamy ranch (which really goes with just about anything), and crispy bacon smothered between a bun with some melted cheese for good measure.  This is what dreams are made of.  I may be getting ahead of myself, but I do sure enjoy a good Chicken Bacon Ranch Sandwich! Step up your Sloppy Joe game with Chicken Bacon Ranch Sloppy Joe’s!  Ready in under 30 minutes, these Sloppy Joe’s are a yummy mixture of chicken, bacon, mozzarella cheese, cheddar cheese, and ranch seasoning all sandwiched between a bun.  If you’ve ever had anything chicken-bacon-ranch flavored before, you know what I’m talking about 😊  This recipe is a win! Start by heating a large skillet over medium high heat.  Add the bacon and cook according to package instructions.  Remove the bacon to a paper towel lined plate to drain some of the grease.  Do not drain the grease from the pan – you will be cooking the other ingredients in the bacon grease. If you need a fun new dinner idea, are looking for an appetizer for a party, or simply want to have Mexican night at home, Tostadas are the way to go!  They are very versatile yet simple and easy to make.  Tostada is the Spanish word for toasted, which fits the description perfectly, because a toasted (or deep fried) tortilla is the base of the dish.  You then top the tortilla with beans, cheese, meat, lettuce, fruit, and other toppings.  Basically, you want to pile the ingredients high and dig in…. these are meant to be messy! Taquitos are a fun hand-held treat that are crunchy and delicious.  You can customize the filling and change up the flavors to create different versions of the same dish and cook them in different ways.  They can be deep fried, baked in an oven or cooked in an air fryer.  I bet you could even use an Instant Pot, but I haven’t figured that recipe out yet 🙂 I’ve use Taquitos as both an appetizer and dinner.  They work well as an appetizer if you are hosting a party and want finger foods or if you plan to bring them to a potluck.  They are a quick grab-and-go item as you typically don’t need a plate or silverware.  Dinner is also an option if you want the Taquitos to be the main event. There is nothing like a juicy burger hot off the grill, chilled cocktail in hand, and warm weather to cure those winter blues.  I want to share some of my favorite chicken/turkey burger recipes with you now that it’s starting to feel like summer!  These are all a nice break from typical hamburgers and healthier for you (well, maybe not once you add all the toppings).  I think they are very flavorful, simple to make, and delicious to eat.  The first recipe I want to share is for Buffalo Chicken Burgers.  These are ¼ pound burgers that taste just like buffalo wings but without the mess.  Who wouldn’t want that?  I like to top my burger with extra buffalo sauce and a little ranch dressing, then add a small amount of each onto my plate for extra dipping sauce.  This burger would also pair well with blue cheese.  The recipe … Continue reading
