Stary by preheating the oven to 375 degrees F and spray a baking dish (8×8 or 9×9) with cooking spray.  Place the chicken in the bottom of the baking dish and sprinkle the fajita seasoning over the top.

Add the sliced bell peppers and sliced onion on top of the chicken.

Bake for 20 minutes then remove from the oven.  Top with shredded cheese, return to the oven, and bake for another 15-20 minutes or until the chicken is cooked through (internal temp of 165 degrees F) and the veggies are tender.

Remove from the oven and garnish with fresh chopped cilantro.  Serve and enjoy!  You can also serve with additional sides such as guacamole, salsa, sour cream, etc.
