The recipe can be found here.

Start by preheating the oven to 425 degrees F.  Add the asparagus to one side of a baking sheet and add the cherry tomatoes to the other side of a baking sheet.  Drizzle both with olive oil.  Toss to coat with the olive oil but make sure to keep the asparagus and tomatoes separate.

Now it’s time to add some seasoning:

Asparagus – sprinkle with Italian seasoning, salt and pepper.

Tomatoes – sprinkle with salt and pepper.

Sprinkle the mozzarella over the asparagus but leave the tomatoes as is.  Bake for about 20 minutes or until the asparagus is tender, the cheese has melted, and the tomatoes start to burst.

While you are waiting on the oven, prepare the glaze.  Combine the balsamic and honey in a saucepan over medium heat.  Bring the mixture to a simmer for about 10 minutes, stirring occasionally, until reduced by half.  Remove from the heat and let cool for about 5 minutes.

When the asparagus and tomatoes are done, remove from the oven.  Use a large spatula to transfer the asparagus to a serving platter then top with the tomatoes.  Pour the glaze evenly over the top.  Garnish with fresh chopped basil.  Serve warm and enjoy!
