Grilled Chicken Caprese is an Italian-inspired chicken dish that is perfect for summer!  It’s made with tender, juicy chicken that’s topped with fresh tomatoes, mozzarella, basil, and a lovely balsamic glaze.  This dish can be prepared in a variety of ways, but my preference is to grill it. The recipe can be found here. Start by preheating a grill pan over medium-high heat.  Spray with cooking spray.  You can also use your outdoor grill if you prefer. Combine the Italian seasoning, garlic powder, onion powder, salt, and pepper in a small bowl. Season both sides of the chicken. Grill for 6-7 minutes on each side or until cooked through and an internal temperature of 165 degrees F is reached. When I think of crisp and refreshing, I think of caprese salad.  It has juicy, ripe tomatoes, slices of soft mozzarella, and is finished with incredibly fresh basil leaves.  If you add some French bread and a smear of pesto and can turn a lovely caprese salad into a tasty pizza.  It’s bursting with flavor and is to toasted to perfection. The recipe can be found here. Start by preheating the oven to 350 degrees F. Slice the French bread in half, horizontally.  If the bread is too long to fit on a baking sheet, slice the bread in half so it will fit.  Make sure you look for soft Italian bread or French bread.  You don’t want to use a hearty baguette or anything that will be too hard and crusty after baking. Sliders are a great way to keep everyone happy whether you’re hosting a football party, entertaining with appetizers, or trying to be creative with school lunches.  They really are a crowd pleaser with so many different flavors!  I recently tried 3 different kinds of sliders and want to share them with you today.  Each is delicious in its own way and something I will definitely make again! Sliders are incredibly easy to make.  You slice the rolls in half, layer the ingredients, place the other half of the rolls on top, brush with a buttery topping, bake, and enjoy!
