For that iconic peppermint twist, crushed candy canes and a hint of peppermint extract are folded into the mixture, alongside a splash of vanilla for added depth. Start by adding the Oreos to the bowl of a food processor and pulse until they resemble fine crumbs.  Add the melted butter and mix until well combined.  You can do this in the food processor or a separate bowl.  Pour the mixture into a 9-inch pie pan and press into an even layer and up the sides to create a pie crust.  Place in the fridge while you work on the filling.

Add the heavy whipping cream to the bowl of a stand mixer and whip until stiff peaks form.  Set aside.

You want to use a separate bowl for this next step or transfer the whipped cream out of the stand mixer bowl, if you only have one stand mixer bowl, because you need the stand mixer.  Add the powdered sugar and cream cheese to the bowl and beat until well combined.  Add about 10 drops of food coloring, the vanilla extract, and peppermint extract, and beat until well combined.

Add the candy canes to a Ziploc bag and crush with a hammer or meat mallet or use a food processor to crush the candy canes.  Add about ½ cup into the bowl of the stand mixer and mix to combine.

Add the whipped cream you made previously and mix on the lowest speed until well combined.  Pour this mixture into the pie crust and spread in an even layer.

Add the Cool Whip on top and spread in an even layer.  Refrigerate for 1-2 hours or until ready to serve (this can be overnight).  Right before you are ready to serve, sprinkle the remaining crushed candy canes over the top.

The reason you want to wait, the candy cane coloring will start to bleed in the fridge and turn the top of your cheesecake a lovely pink color.  Trust me, I speak from experience.
