Start by making instant espresso and let it cool completely. It doesn’t have to be instant espresso if you have an espresso maker, instant espresso is just so simple for a martini!
Next, fill a cocktail share with ice. Add the espresso, vodka, liqueur, and a few drops of red food coloring. Shake vigorously then strain into 2 martini glasses. If your espresso isn’t completely cool, the ice will cool it down.

Start by preheating the oven to 375 degrees F and line a 9×13 baking sheet (1/4 size) with parchment paper. If you don’t have a baking sheet this size that’s OK! You can use a larger baking sheet if needed. You simply won’t fill the entire pan with the dough in a later step.
Add the butter and sugar to the bowl of a stand mixer and cream together for about 2 minutes. Add the eggs and mix for another 3 minutes. Then, add the vanilla and mix until well combined.
You want to add the baking soda and flour, one cup at a time, and mix until well combined. Then, add the sprinkles and mix again.
At this point you would normally chill the dough but there is no need to do that with this recipe. Simply move on to baking. So, add the dough to the baking sheet and press into an even layer, all the way to the sides. The dough should be about ¾-inch thick. If you are using a larger baking sheet, you won’t spread the dough all the way to the sides. Try to keep the dough in a rectangular shape and about 9×13 in size.
Bake for 18-20 minutes but be careful to NOT overbake! The edges will be lightly browned, but the center will stay golden and might look slightly underbaked – this is OK. Let cool completely. If you over bake, the bars will be quite dry.
While the bars cool, prepare the frosting. Add the butter and vanilla extract to the bowl of a stand mixer and beat until well combined, about 2 minutes. Scrape down the sides of the bowl, as needed.
Add the powdered sugar, one cup at a time, and mix until well combined. The mixture might be dry. If it’s not mixing well, add the milk, 1 Tbsp at a time, until the mixture starts to form a frosting. Use more milk that the ingredients states, if needed, to bring the frosting to the desired consistency. Add 1 Tbsp at a time.
Add the food coloring gel and mix until well combined. I add a small drop at first and add more if I want a deeper shade. You can always add more but you can’t take it away so start small! And you can use red or pink, depending on what color you want to frost your bars.
Once the bars are completely cool, add the frosting and spread into an even layer, all the way to the sides. Then, add sprinkles all over the top.
Let the bars sit for a bit to allow the frosting to harden slightly (it won’t be hard but will help with slicing). When ready, slice into individual bars. You can serve and enjoy immediately or store in an airtight container on the counter until ready to serve.

Start by preheating the oven to 325 degrees F and line a cookie sheet with aluminum foil. The foil should go up the sides and over the edges.
Place the crackers in an even layer on the bottom of the pan. Fit as many as you can in a single layer. You can break crackers in half to fill in gaps.
Add the butter and brown sugar to a saucepan and melt over medium heat. Bring to a slow boil and cook for 5 minutes, stirring constantly. Pour this over the crackers and use an offset spatula to spread in an even layer, all the way to the edges.
Bake for 8-10 minutes.
While the crackers bake, add the white almond bark to one bowl, the red candy melts to a second bowl, and the pink candy melts to a third bowl. Add 1 Tbsp coconut oil to the red and pink candy melts. Melt all 3 colors in the microwave, according to package instructions, until completely smooth.
Pour the white almond bark over the crackers/caramel and use an offset spatula to spread in an even layer, all the way to the edges.
Drizzle the red candy melts over the almond bark and use a toothpick or fork to swirl it into the white chocolate.
