In a separate mixing bowl, combine the brown sugar, remaining flour, butter, and remaining cinnamon until it forms a wet mixture.  Add the oats and mix again.  The mixture will be coarse, and I think it works best to mix with your hands.

Crumble the mixture on top of the peaches in an even layer.  Bake for 20-25 minutes, until the oats start to turn a golden-brown color, and the edges start to crisp.  Remove from the oven and let rest to set up.

Once ready, serve warm, topped with ice cream (optional).
