Start by preheating the oven to 350 degrees F and line 2 baking sheets with parchment paper.
Slice the tomatoes and onion into quarters. If using cherry or grape tomatoes you can leave them whole. Peel and crush the garlic.
Place all prepared veggies on the prepared baking sheets, drizzle with olive oil and sprinkle with salt and pepper. Bake for 45-60 minutes or until the tomatoes are soft and starting to burst and the onion is tender. Remove from the oven and let cool.
Transfer the cooked and cooled veggies to a blender, work in batches if needed. Pulse to chop the ingredients. Then, add the milk and puree until smooth. If working in batches, add ½ the milk to the first batch and ½ the milk to the next batch.
Pour all into a large pot or saucepan and heat over medium-low heat, stirring occasionally, until hot.
