Start by preheating the smoker to 275 degrees F with hickory wood chips (or any flavor).
Combine the brown sugar, garlic powder, paprika, onion powder, chili powder, salt, and black pepper in a Ziploc bag. Add the chicken, seal the bag and toss to coat. You might need to work in batches.
Transfer the coated chicken to a foil pan (or multiple pans) – make sure it fits in your smoker first. And ensure the chicken is in a single layer, not stacked.
Insert a thermometer and smoke for 45-60 minutes. While smoking, combine the BBQ sauce and maple syrup in a small bowl, and place in the smoker to warm. It can take up to 2 hours total to smoke the chicken, depending on outside elements and the smoker temperature.
Note: you don’t have to put the “sauce” in the smoker right away if you don’t want to because it will be quite smokey when done. Wait for the chicken to be about ½ done or mostly done if you want a more subtle smoke flavor.
Once done, remove the chicken and cover with foil for about 10 minutes then transfer to a cutting board and shred. Put the chicken back in the foil pan, pour the sauce over the top, and stir to coat. Smoke for another 15-20 minutes.
