Slice the chicken and place it in a Ziploc bag, then season it with salt, pepper, and 1 tablespoon of flour. Seal the bag and toss until the chicken is fully coated. In a large skillet, melt 1 tablespoon of butter over medium heat. Add the chopped onion and sauté for about 5 minutes, or until translucent and fragrant. Add the chicken to the skillet and brown it on all sides, keeping in mind it will not be fully cooked at this stage.
Next, pour in the chicken stock and stir in the paprika, smoked paprika, and a pinch of salt. Mix everything well, bring the mixture to a gentle simmer, then reduce the heat to medium-low. Before draining, reserve about ½ cup of the pasta water, then drain the noodles and return them to the pot. Stir in the reserved pasta water along with 1 tablespoon of butter until the noodles are glossy and well coated.
In a small bowl, mix the remaining tablespoon of flour with the sour cream until smooth and set aside. Once the chicken has finished cooking, remove it from the skillet and place it on a plate. Stir the sour cream mixture into the skillet, mixing until fully incorporated and creamy. Return the chicken and any accumulated juices back into the pan, stirring to coat everything evenly. Let it simmer uncovered on low heat for about 5 minutes, or until the sauce thickens slightly.
