Start by placing the thawed chicken breasts in the bowl of a slow cooker and set aside.
Combine the melted butter, chicken broth, brown sugar, garlic powder, paprika, chili powder, and cayenne pepper in a mixing bowl. Whisk until well combined and pour over the chicken.
I’m going to pause for a moment and talk about the cayenne pepper. I used an entire 0.7oz container of cayenne pepper the first time this recipe was made, and it was WAAAAYYYYYYY too spicy. Like, couldn’t eat it spicy. That was about 4 Tbsp work of cayenne pepper for reference. I wrote the recipe for 2 Tbsp of cayenne pepper, maybe 3 Tbsp if you like more heat. I do not recommend using 4 Tbsp unless you want to start coughing and not be able to enjoy your meal. Completely up to you 🙂
Ok, back to the recipe. You can now cover the chicken and cook on LOW for 4-5 hours. You want the internal temperature of the chicken to reach 165 degrees F. Then, remove the chicken from the crockpot and place on a cutting board. Use two forks to shred but it should be tender enough to simply fall apart. Return the chicken to the slow cooker and stir to coat with the sauce.
Either keep the chicken on the warm setting until ready to eat or enjoy immediately. When serving, add the shredded chicken to buns. Top with pickles and a drizzle of ranch or blue cheese dressing. Keep extra dressing on the side in case the chicken is spicy! But the pickles help cut down the heat. Enjoy!
