Is anyone else still full from Thanksgiving? I for sure am…but it was worth every bite! Depending on your point of view, Thanksgiving leftovers are either a good thing or a bad thing. In my opinion, they are a great thing!
You can enjoy the same delicious meal a second time around, or third, or forth…you get the picture. Or, you can put those leftovers to good use and create something new. Think of Thanksgiving as the holiday that keeps on giving. If you use the leftovers wisely, you can have a different meal each day of “leftover week”.
I have three different recipes to share with you today. I still had plenty of leftovers in addition to these recipes, so I filled in the meal by also using the leftovers as a side dish. So, the meal included a “new” leftover creation with a side of “traditional” leftovers (aka just reheating the leftovers :)). The reason for this is probably the fact that I made enough food for 7-8 people when in reality only 2 of us were having dinner…. What can I say, I love leftovers!
The first recipe is for Mashed Potato & Stuffing Cakes. This recipe calls for leftover mashed potatoes, stuffing, and turkey, plus a few additional ingredients. You combine all ingredients, use an ice cream scoop or cookie scoop to spoon the mixture into a frying pan, and cook on each side until golden brown.
Super easy and super tasty! It combines the delicious flavors of everything on your Thanksgiving plate into one. I think these are great to eat plain with a sprinkling of salt or topped with leftover cranberry sauce.

The second recipe is for Turkey & Mashed Potato Bites. This recipe calls for leftover mashed potatoes and turkey, plus a few other items. Same as the first recipe, combine all ingredients and use an ice cream scoop or cookie scoop to spoon the mixture into hot oil. The balls will fry until golden brown.
The most important part of making these it to make sure all your ingredients are well chilled. This helps the balls stay together when frying. If the ingredients aren’t cold the balls won’t hold their shape, the taste will be the same, but they won’t look pretty 🙂 These are delicious with gravy or cranberry sauce drizzled on top.

The final recipe is for an Oven Baked Leftover Turkey Sandwich. This is a twist on a panini. I thought oven baked sounded simple and created little cleanup, however you could make this sandwich as a panini and get the same results. You assemble the sandwich, wrap in foil, and bake.
This is an extremely satisfying sandwich! The turkey is juicy, the bread is soft and warm, and the cranberry sauce adds a tangy taste. This is one recipe I will make again!
