Winter is the best time of year to have chili! It’s hearty, delicious, keeps you warm on a cold day, and is super easy to make. One thing I love about chili is the “set it and forget it” mentality. Once you combine the ingredients and set the timer, the slow cooker does all the work and you have a wonderful meal 4-8 hours later. I personally like this on busy weekends because we don’t have to worry about dinner, spend time planning and cooking, etc. but still get to enjoy a nice meal.
I have two different chicken chili options to share with you. I like a bit of heat/spice in my chili and think both recipes have the perfect amount. You get an amazing combination of chicken, veggies, and spices without it being too overwhelming. If you are anything like Andrew and love spicy food, you can always add a little hot sauce or extra spice to your bowl when ready to eat 😊

Like I mentioned previously, chili is a great “set it and forget it” meal. Simply add the chicken to the bottom of your slow cooker, add the veggies, spices, and chicken broth, set the timer, and forget about it until ready to eat (typically 4-8 hours later depending on how high you set your slow cooker).
Both options are a hit at my house, but we thought it would be fun to do a “cook-off” to determine which recipe we like more. Let me tell you, it’s a tough call! The White Bean Chicken Chili has a thick and creamy texture, and the crushed Nacho Cheese Doritos on top add a little something special. It’s not your typical chip to have with chili so it makes this chili slightly different…and adds a little extra cheesy taste to every bite! The Black Bean Chicken Taco Chili isn’t as thick or creamy but has a wider variety of veggies and spices, so it almost has more “kick” in every bite. I like to eat this chili with either Tortilla Scoops or Frito Scoops.
Time to vote! I made the White Bean Chicken Chili first so that obviously took 1st place in my mind. Then I made the Black Bean Chicken Taco Chili and thought I had a new winner. It’s too hard to decide! I eat one and love it, then eat the other and love it. I asked Andrew for his opinion and he said the same thing, so I guess we have a tie! Whichever option you choose to make (hopefully both 😊) I truly hope you enjoy the simplicity of the ingredients involved and huge taste you get in every spoonful!
