Chicken Satay with Peanut Sauce are perfectly grilled chicken strips that have been marinated in a flavorful sauce.  They are perfectly sweet and tangy and make an easy dinner.  Don’t forget to drizzle the leftover peanut sauce on top of the skewers before serving!

Start by slicing the chicken breasts into strips and set aside.

Then prepare the marinade by combining the yogurt, ginger, garlic, and curry powder in a mixing bowl.  Add the chicken to the marinade and toss to coat.  Cover with plastic wrap and place in the fridge for up to 2 hours.

While the chicken in marinating, soak the skewers in water.  I like to add water to a drinking glass and place the skewers inside.

You can also make the peanut sauce while waiting.  Add the peanut butter, soy sauce, red chili paste, brown sugar, and lime juice to the bowl of a food processor.  Puree to combine.  If the sauce is too thick and needs to thin out, add about ¼ cup hot water to the food processor and puree again.  If it’s still too thick, add an additional ¼ cup water.  Pour the sauce into a bowl and set aside.

Once the chicken in ready, thread the chicken pieces onto the skewers.  Make sure to weave the skewers through the chicken so it stays in place and doesn’t fall off.

Heat a grill pan over medium heat and brush with oil.  Grill the chicken satays for 3-5 minutes on each side or until cooked through.

Serve the satays warm with the peanut sauce drizzled on top and a little extra on the side for dipping.  You can also sprinkle some chopped peanuts on top for garnish.
