We love to grill, and we love seafood, so we combined the two to create Pineapple Shrimp Skewers. These are prefect for a lighter dinner and come together so quickly! Plus, you can customize the skewers to different tastes by adding different fruits or veggies to accompany the shrimp. They are sweet yet citrusy, and very delicious!

Start by combining the coconut milk, hot sauce, soy sauce, lime juice, and orange juice in a bowl. Pour into a Ziplock bag, then add the shrimp to the bag and toss to coat. Seal the bag and place in the fridge to marinate for 1-2 hours. Make sure the shrimp is thawed and shelled before placing in the bag!
While the shrimp marinates, soak wooden skewers in water. I like to fill a drinking glass with water and place the skewers inside.
Once the shrimp is done marinating, assemble the skewers. Add 1-2 pieces of pineapple, then 1 piece of shrimp, then 1-2 pieces of pineapple, then 1 piece of shrimp, and end with 1-2 pieces of pineapple. Repeat until all skewers have been made and all the shrimp has been used.
This is where you can get creative and add additional fruit and/or veggies of your choosing. Add those items into the rotation when stringing the food onto the skewers.
Preheat a grill pan over medium-low heat. Brush the olive oil over the top.
Add the skewers and cook for 4-5 minutes per side or until cooked through. Serve hot with a side of rice. My favorite rice dish is Cilantro Lime Rice. The recipe can be found here. It complements the skewer flavors nicely.
