Are you ever hosting a party or having a few guests over for dinner but don’t know what to serve?  I always struggle with what to cook because I want my guests to enjoy the meal but also want time to socialize and not be stuck in the kitchen.  Pulled chicken or pulled pork is always a good option.  You can prepare it in the slow cooker so it’s no fuss, it feeds a crowd, and is great to serve for a build-your-own-sandwich bar.  Or you can make it for yourself to enjoy for meals through the week or to freeze for later.

Today, I want to share my 2 recipes for pulled chicken.  I haven’t tried these recipes with pork, but I don’t see any reason why you couldn’t substitute the chicken for pork to make pulled pork sandwiches.  If you do try this, let me know how it turns out!

First up is Slow Cooker Pulled BBQ Chicken.  The recipe is very easy to make because it’s prepared entirely in the slow cooker.  As the saying goes…. set it and forget it!  The chicken has a sweet yet smokey flavor and makes a great sandwich.  You can also eat the chicken as is, serve it on a bed of rice or add it to a salad.

Add the chicken to the bottom of a slow cooker.  Pour the BBQ sauce over the top to entirely coat the chicken.

Add the Italian dressing and Worcestershire sauce.  Sprinkle the brown sugar over the top.

Close the lid and cook on LOW for 5-6 hours or HIGH for 3-4 hours, or until the internal temperature of the chicken is 165 degrees F.

Remove the chicken to a cutting board or bowl and use forks to shred the chicken.  You can also do this in the slow cooker but I find it easier to remove the chicken so I can ensure it’s all shredded.  Put the chicken back in the slow cooker and stir to coat.

You can let the slow cooker continue to warm the chicken once shredded for a few minutes to help absorb some of the sauce if you want.  Otherwise, feel free to serve right away.

Serve warm on buns with a slice of cheese and top it with coleslaw or sliced onion.  You can also toast the buns and melt the cheese in the oven before serving, if you want to be extra fancy 😊

Next up is Slow Cooker Pulled Teriyaki Chicken.  Same as mentioned previously, this recipe is very easy to make.  The chicken is sweet and tangy flavor and makes a great sandwich.  You can also eat the chicken as is, serve it on a bed of rice or add it to a salad.

Add the chicken to the bottom of a slow cooker.  You want the chicken to be in a single layer so you might need to smush it down to make it all fit.  Season with black pepper.  You do not need to add salt because the teriyaki sauce is plenty salty.

Add the brown sugar, soy sauce, vinegar, ginger, and garlic to a mixing bowl.  Whisk together until well combined then pour over the chicken.

Place the lid and cook on LOW for 3 ½ – 4 hours or HIGH for 2 hours, or until the internal temperature of the chicken is 165 degrees F.

 

Remove the chicken to a cutting board or bowl and use forks to shred the chicken.  Set aside.

Pour the sauce from the slow cooker into a large pot.  Bring the sauce to a boil.

In a small bowl, mix the cornstarch and water.  Pour into the boiling sauce and stir to combine.  Let the sauce continue to boil for a few minutes until it thickens.

Add the chicken to the sauce and stir to coat.  You can turn down the heat to low and let the chicken absorb some of the flavors if you want.  Otherwise, feel free to serve right away.

Serve warm on buns with a slice of cheese.  I like the combination of the teriyaki chicken with provolone cheese.  Add any toppings of your choosing…. sliced onion, sliced bell pepper, coleslaw, shredded lettuce…anything goes!  You can also toast the buns and melt the cheese in the oven before serving, if you want to be extra fancy 😊
