Get ready to elevate your fajita game with our mouthwatering Smoked Chicken Fajitas! Packed with bold flavors and vibrant colors, this Tex-Mex classic takes on a tantalizing twist with the irresistible essence of smoked chicken. Tender, juicy boneless, skinless chicken breasts are infused with the robust flavors of taco seasoning and paired with a colorful medley of thinly sliced bell peppers and onions. The real star of the show? Three cups of zesty salsa that bring a burst of freshness to every bite. Served in warm tortillas and topped with gooey shredded cheese and cool sour cream, these fajitas are a fiesta for your taste buds. Whether you’re hosting a backyard barbecue or simply craving a flavor-packed weeknight dinner, our Smoked Chicken Fajitas are sure to be a hit.

Start by preheating the smoker to 215 degrees F with apple flavored wood chips.  You can use any variety of wood chips you choose but I think apple is a great flavor for this recipe.

Place the chicken in the bottom of a 9×13 aluminum foil pan.  Sprinkle the taco seasoning over the top, then pour 2 cups of salsa over the top.  Place the pan in the smoker and smoke until an internal temperature of 165 degrees F is reached, about 2-3 hours.  The smoke time will depend on the outside elements – the temperature, wind, direct sunlight on the smoker, etc.  It’s best to keep a thermometer inserted in the chicken that you can reach to read throughout cooking or temp the chicken periodically to ensure it is cooked through (let me know if you need a recommendation of one to buy).

Once the chicken is cooked through, remove the chicken to a cutting board and use forks to shred the chicken.  Return the chicken to the foil pan.  Add the additional cup of salsa along with the sliced bell peppers and onions.  Stir to combine all ingredients.

Return the pan to the smoker and smoke for an additional hour or until the veggies are tender.  Remove from the smoker and serve immediately.  My favorite way to serve is as fajitas, stuffed inside tortillas and topped with sour cream and shredded cheese.  You can add any other toppings of your choice as well – make it your own!  Enjoy!

Any leftovers should be cooled completely, covered with foil, and stored in the fridge.
