Start by adding the butter, brown sugar, and sugar to the bowl of a stand mixer.  Cream together until light and fluffy.  Add the eggs and vanilla and mix until combined.  Add the flour, baking soda, and salt, and mix until well incorporated.  Add the chocolate chips and mix until well combined.  Transfer the mixture to a mixing bowl (from the stand mixer bowl).

Gently crush the potato chips in your hand and add them to the mixing bowl.  Use a spoon to combine into the dough.  You want the potato chips to be in pieces, not crumbs.  You can add additional potato chip pieces when forming the cookies later if needed and you don’t think there are enough in the dough.

Cover the dough and refrigerate for 30 minutes.  While the dough chills, preheat the oven to 350 degrees F and line 2 baking sheets with parchment paper.  Roll the dough into 1-inch balls and place on the baking sheet, spaced apart.  You will need to bake the cookies in batches.

Bake for 10-11 minutes or until the cookies are lightly browned and the edges are getting crispy.  Let cool slightly then transfer to cooling racks to cool completely.
