Start by adding the shrimp, olive oil, lemon juice, and garlic to a Ziploc bag.  Seal the bag and toss to coat the shrimp.  Refrigerate the shrimp for at least 4 hours or up to overnight to marinate.

Next, heat the Himalayan Salt Block according to package instructions.  You want to heat the salt block LOW and SLOW until the desired temperature of 400 degrees F is reached, which will take about 40-45 minutes of slow heating.  I say low and slow because this will preserve the salt black and prevent it from cracking during heating.

Once the salt black has reached the appropriate temperature, place the shrimp on top, evenly spaced.  Close the grill cover and cook for about 4 minutes then flip and cook for another 4 minutes.  The shrimp should be opaque in color.

Transfer the shrimp to a serving platter and turn the heat off the grill.  Serve immediately and enjoy!  Squeeze additional lemon over the top before eating, which is optional but quite refreshing.

For the salt block, you want to let it cool completely before cleaning it or storing it.  We don’t even remove ours from the grill until it’s completely cool.  If for some reason we need to (it’s nighttime and we need to cover out grill), we will use oven mitts to CAREFULLY transfer it to a baking sheet and let it sit overnight on top of our oven.  Make sure to follow manufacturer instructions for cleaning and storing to preserve the life of your salt block.
