Slice the chicken breasts in half lengthwise to create very thin cutlets. Place the chicken in a large Ziploc bag, pour in the buttermilk, seal, and refrigerate for 1 hour to marinate.

Set up a breading station using three shallow dishes. In the first dish, mix the flour, 1 tsp salt, 1/2 tsp pepper, and garlic powder. In the second dish, whisk the eggs with 2 tablespoons of water. In the third dish, combine the breadcrumbs with the remaining 1 tsp salt and 1/2 teaspoon pepper. Place an empty plate at the end of the assembly line for the breaded chicken.

While the chicken cooks, prepare the dressing by whisking together the lemon juice and 1/4 cup oil. Season with a pinch of salt and pepper, then set aside.
