Chicken Cordon Bleu Quesadillas are a simplified version of the classic dish.  You still get the amazing layers of ham, cheese, chicken, and Dijon sauce but this time it’s sandwiched between 2 tortillas and cooked until crisp.  Think easy to assemble and fuss free!

Start by making the Dijon sauce.  Melt the butter in a saucepan over medium-low heat.  Whisk in the flour.  Then, slowly pour in the milk while whisking.  Add the bouillon cube and continue to whisk until dissolved.  Add the mustard and stir to combine.  Let the mixture simmer for about 5-7 minutes or until thickened.

Remove from the heat and stir in the parmesan cheese.  Season with salt and pepper, to taste.  Keep warm on the lowest burner setting while you prepare the quesadillas.  This stuff is good enough to drink!

Heat a large skillet over medium heat.  Add one tortilla.

Add one slice of cheese (or more if you like).

Add 2-3 slices of ham (or more if you like).

Sprinkle with breadcrumbs.

Add one slice of cheese (or more if you like).

Add ½ of the sliced chicken.

Drizzle with a few spoonsful of the Dijon sauce (again, more if you like).

Sprinkle with breadcrumbs.

Add one slice of cheese (or more if you like).

Add a second tortilla on top and gently press down.

Let the quesadilla cook for about 5 minutes then check to see if the bottom is turning golden brown.  You also want the cheese to start melting.  If ready, use a large spatula to flip the quesadilla over and cook on the other side for about 5 minutes.  Remember – you want to cook the quesadilla slowly so all ingredients warm through and the cheese melts without burning either side!

Remove the quesadilla from the pan and repeat the above steps to create the second quesadilla.

Slice and serve warm with the Dijon sauce on the side for dipping.

This recipe is SOOOOOOOOOOOO good!  It’s easy to assemble, packed full of tender meat and melted cheese, and it makes the perfect handheld meal.  I did mention it earlier, but the sauce is good enough to drink.  You might want to save the sauce recipe and use it for other meal planning – drizzle over grilled chicken, dip your French fries in it, etc.
