Creamy Cajun Chicken Pasta is my newest weeknight recipe that your family will love!  It’s a filling and delicious pasta that comes together in about 30 minutes.  It’s rich, creamy, a little spicy, and packed with wonderful ingredients.  I will admit…when I was originally working on this recipe it was going to be soup, not pasta, but plans changed, and soup just wasn’t in the cards that night.  I blame the noodles for absorbing so much of the liquid that would have been yummy soup, but the recipe still turned into something great, and we had a lovely pasta dinner.  One thing I love to do is play around with recipes so even though my original plan didn’t work out, I was able to recover and still serve dinner.  Has that ever happened to you?

The recipe can be found here.

Start by seasoning both sides of the chicken tenders with Cajun seasoning.  I like to use tenders because they are about the same thickness and size, so they cook evenly.  Feel free to use chicken breasts if you prefer.  Heat oil in a large skillet over medium heat.  Add the chicken tenders and cook on each side for 5-6 minutes or until an internal temperature of 165 degrees F is reached.  Remove to a cutting board and set aside to cool.

Melt the butter in a Dutch oven over medium heat.  Add the onion and garlic and sauté until translucent and fragrant.  Add 1 Tbsp Cajun seasoning and stir to combine.

Add the chicken broth, can of diced tomatoes (plus the liquid from the can), heavy cream, salt, and pepper.  Stir to combine and bring to a boil.  Reduce the heat to medium-low and let simmer.

Add the dry pasta and stir to combine.  Continue to simmer until the noodles are cooked through, about 10 minutes.  Stir occasionally to prevent the noodles from sticking to the bottom.  This is where all hell broke loose for me 😊 The noodles absorbed too much liquid and turned our soup into pasta.  It’s OK.  I’m over it.  Dinner was still amazing.

Add the parmesan cheese and stir to combine.  Slice the chicken into bite sized pieces, add to the Dutch oven, and stir to combine.  Reduce the heat to low and continue to heat for about 5 minutes or until the chicken is warmed through.

Spoon the pasta into bowls and garnish with green onion and additional parmesan cheese.  Serve warm and enjoy!

The recipe can be found here.

It’s the perfect combination of soft, tender noodles, creamy saucy, and moist, seasoned chicken.  Comfort food for a cold night or anytime you are craving a flavorful pasta dish.

Happy Cooking!
