If you’ve got a Blackstone griddle sitting in your backyard, this recipe is exactly why you bought it.
This Chicken Stir Fry comes together fast, hot, and full of flavor — crispy-edged chicken, colorful veggies, and a savory sauce that coats everything perfectly. The Blackstone’s wide, flat surface is basically made for stir fry, giving you that high-heat sear you just can’t replicate in a regular pan.
It’s a weeknight dinner hero — on the table in under 30 minutes, easy to customize with whatever veggies you’ve got on hand and guaranteed to impress anyone watching you cook it.

Before anything else, get your Blackstone heating up to medium-high across 2-3 zones. You want plenty of cook surface to work with — that’s the whole beauty of the griddle. While it’s heating, whisk together the chicken broth, soy sauce, honey, and cornstarch in a bowl and set it aside. Then slice the chicken and bell peppers and mince the garlic so everything is ready to go. Stir fry moves fast, so having it all prepped ahead of time is key.
Once the griddle is hot, drizzle oil across the surface and get cooking. Add the broccoli and carrots to one section and let them cook for 2-3 minutes, stirring occasionally. On the other section, add the chicken and season with salt and pepper. Cook for 4-5 minutes, flipping here and there, until golden and cooked through to 165°F.
Toss the bell peppers in with the broccoli and carrots and cook for another 1-2 minutes until just tender. You want them to still have a little bite — nobody wants mushy peppers.
Now bring it all together. Combine the chicken and veggies in the center of the griddle, add the garlic and ginger, and give everything a good stir. Pour that sauce right over the top and toss to coat. Let it all cook together for another minute or two until the sauce thickens up and gets nice and glossy.
Pull it off the griddle and serve hot over a bed of fluffy rice. Finish with a sprinkle of sesame seeds and dig in!

This is Blackstone cooking at its finest — fast, flavorful, and just plain fun to make. There’s something about that sizzling griddle, the smell of garlic hitting a hot surface, and a glossy sauce coming together in real time that just never gets old.
The best part is how flexible this recipe is. Swap in whatever veggies you have on hand, dial the heat up or down, serve it over rice or noodles — it’s the kind of recipe that works with what you’ve got and still turns out incredible every time.
