Preheat the oven to 425°F and line a baking sheet with parchment paper. Poke each sweet potato a few times with a fork, then rub them lightly with olive oil and sprinkle with salt. Place them on the baking sheet and roast for 30–35 minutes, or until they’re tender and can be easily pierced with a fork.

While the potatoes are baking, make the tahini butter. In a small bowl, whisk together the softened butter, well-stirred tahini, lime juice, soy sauce, sesame oil, and minced garlic until smooth and creamy. Taste and season with salt and black pepper as needed.

Next, toast the sesame seeds. Add them to a small dry pan over medium-low heat and gently swirl or stir until they turn golden and fragrant. Remove from the heat immediately so they don’t burn.
